Chicken Pita Pizza

Makes 1 Serving

Ingredients:Capture

  • 2 ounces of boneless, skinless chicken breast (cubed)
  • 1 Tbsp of feta cheese
  • 1 Tbsp of Zerto cheese (find in deli section in container, I like 4 cheese blend, so much flavour and only 20 calories per Tbsp) – expensive but last a long time when only using 1 Tbsp on pizza!
  • 1/4 cup of sliced red bell peppers
  • 1/4 cup of sliced zucchini
  • 5 grape tomatoes
  • 1/4 cup of pasta sauce (choose the one with the least amount of sugar & sodium)
  • 1 tsp of olive oil

Directions:  Preheat oven to 420 F.  Spray medium no stick frying pan with no butter cooking spray, Sautee vegetables with a dash of sesame seeds, red pepper flakes and Italian herb seasoning!  Once veggies are browned, take out and place aside, in same frying pan, cook chicken and toss in olive oil, cook until chicken is no longer pink. Spread pita with sauce first, then place veggies and chicken on top and sprinkle cheese over pita!  Bake for 10 minutes or until done!

NOTE:  I always use brand name, Food for Life brown rice tortilla wraps instead of pita.  You can find these in organic section in grocery stores.  I find they get really crispy! Sometimes I will add some pineapple and black olives on my pizzas and a slice some avocado on top!
